The Honest Version

Stainless costs more up front. That's the whole trade.

Cast iron and PVC are cheaper per foot on day one, and for a low-traffic, low-washdown room that may be enough. The case for stainless is year eight — cast iron rusting at the joints, PVC deformed under a pallet jack, the drain cut out of a floor you already paid to coat. If your plant washes down daily, that day arrives.
